Steam pudding with quince jelly

3 eggs

150g sugar

150g unsalted soft butter

150 g self-rasing flour

1 tsp of baking powder

1 tsp of orange blossom water

3 tbsp of cream

Single cream to serve

Preparation

Pre-heat the oven at  200 ºC.

In a bowl whisk the eggs with the sugar and the butter. Add the orange blossom water followed by the flour and the baking powder. Butter a pudding basin and place the quince jelly at the base. Transfer the batter on top and close the basin. Fill a deep baking tray with water and place the pudding basin in the middle. Bake in the oven for 45 minutes, till the surface is golden. Certify yourself that is cooked by piercing a toothpick in the middle of the pudding, which should come out dry. Remove from the oven and let it cool down.

Transfer the pudding to a plate and serve it sprinkled if preferred with single cream.
