Baba de Camelo (Camel’s dribble)

Ingredients

1 can of condensed milk (approx 400 gr)

The volume of the condensed milk can, with semi-skimmed milk

4 eggs

grind of half a lemon

1 small drop of vanilla essence.

10 amaretti biscuits

flaked almonds for topping

Preparation

Separate the egg whites from the egg yolks. Whisk the whites till they form soft white peaks. Set aside.

Beat the egg yolks and place them together with the condensed milk, the semi-skimmed milk, the lemon grind and the vanilla essence in a pan. Cook gently on a medium heat till the mixture starts thickening. Remove from the heat and let it cool down completely. Fold in the whisked egg whites.

Using your hands, crumble the amaretti biscuits and place inside a glass cup or bowl. ( 2 biscuits per person). Top up with the milk mixture and decorate with flake almonds. Place in the fridge for a couple of hours before serving.
