Stewed apple & Port Icecream (Gelado de maçã e vinho fino)

Ingredients

300 ml of plain Yoghurt

100 ml of double cream

170 gr of sugar

25 gr of unsalted butter

6 apples (no skins or stones)

1 small glass of red Port wine

Preparation

In a frying pan, slowly melt the butter with the sugar and add the apples, cut in segments. Let them brown and mix in the port wine. Slowly cook them till you end up with soft apple segments on a dark-port sugar syrup. Remove from the heat and let them cook completely.

In a bowl mix the yoghurt, the cream and the sugar and beat well. Place this mixture into the icecream, together with the apples. Follow the instructions of the manufacturer, on mine I leave this mixture churning for 45 minutes, till its consistency becomes “frozen yoghurt” like.
