This year I have been blessed with frequent visits by my family. Last weekend my older and only sister Joao arrived for a long weekend chez moi. We had a great time together, filled with London walks, ubiquitous shopping and food. In my kitchen I showed her my last experiments and we revisited some of my grandmother’s classics while talking and laughing about our childhood memories which were surrounded by food. In between conversations these lovely palmiers emerged, this time sweetened by a delicate raspberry jam. A great, relaxed weekend that ended with us accompanying these delicious biscuits with a cup of Earl Grey while projecting the future.
350gr of good quality puff pastry
2 tbsp of Raspberry jam
1 tbsp of hot water
Pre-heat the oven at 200 ºC.
In a small bowl, dissolve the jam with the hot water.
Roll out the pastry, brush it with the jam and fold it. (as per Figure 1)
With a sharp knife cut pastry discs of at least 0.5cm of thickness. Place them in a baking sheet, covered with baking parchment and bake in the oven for 20 minutes, till they are golden.
Remove from the oven and let them cool completely before serving.
