Damascos recheados de mascarpone e pistachios/Mascarpone stuffed apricots with pistachios

The neighbourhood I live in London is predominantly Middle Eastern. I love walking to the shops and staring at the beautiful produce which rests outside. Tonight, on my way home, the plumpiest of all apricots caught my eye.  I coudn’t resist but to buy a bunch and make this simple yet delicious dessert to flavour with an espresso. A little sweet bite to cheer us all up and help us going though the week! Enjoy!

Ingredients

200 gr of soft dry apricots
100 gr of mascarpone
50 gr of icing sugar
50 gr of chopped pistachios

For the syrup

100 ml of orange blossom water
juice of one small orange
100 gr of sugar

Preparation

In a bowl, whisk the mascarpone with the icing sugar. Open the dry apricots and fill them with a tablespoon of sweetened mascarpone. Sprinkle each one with the chopped pistachios.

Meanwhile in a small pan, place the syrup ingredients and let them simmer for 15 minutes, till it slightly thickens. Remove from the heat and let it cool down completely before drizzling on top of the stuffed apricots.
