Baked apples are one of my mum’s favoured desserts. She used to pop them in the oven, not to waste the heat of a Sunday roast. I have followed her footsteps in the kitchen once more and because it’s Christmas I have added one staple of the English Christmas table: mincemeat. I didn’t forget a naughty drop of armagnac per apple..here’s to the season of glorious indulgence!
Maçãs de Natal/Christmas apples
4 tbsp of mince meat
4 tsp of demerara sugar
4 tbsp of armagnac or brandy
Pre-heat the oven at 190 ºC.
Wash the apples and core them. Stuff them by no particular order with the sugar, the mince meat and pour the armagnac on top of each one.
Bake in the oven for 20-25 minutes, till they soft and light brown. Remove from the oven and set aside to cool. Serve warm as is or with a tbsp of creme fraiche.
