This week I had the pleasure to meet a chocolatier from Portugal. Anabela owns the wonderful ELLG Gourmet in Lisbon which produces and sells not only delicious but also extremely well packaged chocolate. I got given some to try. I baked a “clafoutis” type of dessert with it. Amazing. Everything a chocolate bar should be: velvety, with the right cocoa solids, sharp. For this dessert I have added a spoonful of orange marmalade, which compliments it perfectly.
Chocolate and orange marmalade bake/Doce de chocolate e laranja amarga
200gr of good quality cooking chocolate (at least 50% of cocoa solids)
100 gr of sugar
25 gr of unsalted butter
100 gr of ground almonds
20 gr of orange marmalade
Pre-heat the oven at 180 ºC.
Melt the chocolate with the butter in a ban-marie. Let it cool down completely.
In a bowl whisk the eggs with the sugar till it resembles a fluffy and light paste. Add in the melted chocolate and the marmalade and mix well. Fold in well the ground almonds.
Butter a baking dish and line it with grease proof paper. Pour in the dish the chocolate mixture and bake in the oven for 25 minutes, till it has risen. Pierce it with a skewer, which should come out dry when the bake is ready.
Remove from the oven, dust with icing sugar. Serve warm with a dollop of cream.
