Smoke Salmon fishcakes with a mexican salsa/Bolos de salmão fumado com uma salsa mexicana

A delicious and light meal, perfect for Summer in the garden. The salsa takes me back to the beaches of Mexico. Enjoy x

Smoke Salmon fishcakes with a mexican salsa/Bolos de salmão fumado com uma salsa mexicana

Ingredients

For the fishcakes

300 gr of potatoes (peel and boiled till they cooked)
250 gr of smoked salmon
1 small bunch of parsley
3 spring onions
slat & pepper
3 egg yolks
2 tbsp of polenta

For the salsa

3 tomatoes (no seeds)
1 small red pepper
1 red onion
Juice of 1 lime
1 small bunch of coriander
Half a chilli (finely chopped)
Salt & pepper
2 tbsp of olive oil

Preparation

Pre-heat the oven at 190 °C.

In a bowl mash the boiled potatoes. Place them in your food processor together with all ingredients needed for the fishcakes. Whizz till everything is blended and resembles a coarse paste. Remove from the food processor and make individual balls that you squash so they look like a pattie. Dust both sides with the polenta. Place them in a lightly oiled baking tray and bake till they are golden and crisp.

Using your food processor chop all ingredients for the salsa and dress with the lime juice, the oil and season with black and pepper. Serve it with a fishcake on top.
